My friend and I recently went to experience the delights of the brunch that needs to be tried, and honestly, I haven’t stopped thinking about it since. We rolled up to Courtyard by Marriott North Pattaya on a lazy Saturday, sun-soaked and hungry, expecting a nice buffet.
What we got instead was a full-blown feast with a soundtrack, and I am still not over it.
From the second we walked through the doors, the staff had us. Genuine smiles, warm greetings, and that rare kind of attentiveness. Every plate we cleared was whisked away within moments, every question answered with a smile, That’s the kind of hospitality that turns a meal into a memory.
The whole space struck this perfect balance between polished and relaxed natural materials, an open kitchen where you could watch the chefs work their magic, and enough light and air that it never felt stuffy despite being a jam-packed Saturday sitting.
It’s the kind of room that makes you want to linger for hours, and we did.
The food; Where do I even begin? We started at the seafood counter, and I mean started, a glistening display of French oysters and plump mussels on ice set the tone for what was clearly a “go big” kind of brunch. From there we found ourselves at a sushi and sashimi spread that put plenty of standalone restaurants to shame: silky salmon and tuna nigiri, rich seared yellowtail, sticky unagi rolls wrapped in nori, and a crunchy soft-shell crab roll dusted in tobiko that practically glowed orange.
Nearby, a whole crab simmered away in a fragrant, golden Thai curry, its shell cracked open to reveal sweet, tender meat soaking up all that spice.
Then came the mains, and this is where things got serious. Wood-fired pizza with a bubbling, blistered cheese crust. Whole grilled tiger prawns finished under a molten cheese gratin that had absolutely no business tasting that good. Impossibly crispy pork belly with shattering crackling and meltingly soft fat underneath. And a seafood tower, piled high with king crab legs, lobster, oysters and more, that got carried to the table like a trophy, because frankly, it deserved the entrance.
Now, about their roast beef. I need a moment. Carved to order, crusted in a thick herb bark of rosemary and thyme, and sitting in a puddle of its own rested juices, this was, without exaggeration, one of the best roasts I’ve had in Thailand. Blushing pink in the centre, deeply savoury at the crust, and served alongside a tumble of char-roasted peppers, zucchini and potatoes that had clearly spent real time getting friendly with the grill. Perfect doesn’t feel like a strong enough word, but I’m using it anyway.
For the sweet tooth it was a whole separate journey. A sprawling dessert table of soft, oozy French cheeses with honey, dried fruit and nuts sat next to fresh fruit bowls, chocolate brownies, pastel marshmallows and an eye-catching chocolate fall. Mango and pandan mousse tray, a swirl of soft-serve so silky it deserved its own fan club, and cakes I genuinely didn’t have room for but tried anyway. The range was staggering something for every mood, every craving.
